Recipe # 1

THAI SWEET CHILLI CHICKEN

Ingredients:
1. Chicken Leg (10-15 pieces) (150 grams)
2. Corn Flour for coating batter (30 grams)
3. Finely chopped garlic (15 grams)
4. Finely chopped ginger (10 grams)
5. Dry Red Chili (3 grams)
6. Dark Soy Sauce (15 ml)
7. Diced Capsicum (20 grams)
8. Onion Dice (20 grams)
9. ENE HOT AND SWEET CHILLI SAUCE (20 grams)
10.Lemon Juice (15 ml)
11.Corn Flour mix with water (10 grams)
12.Aromatic powder (optional) (4 grams)
13.White Pepper Powder (4 grams)
14.Salt (2 grams)
15.Spring Onion (20 grams)
16.Sesame Oil (8 ml)

Procedure:
1. Heat oil in a wok then add the finely chopped garlic, ginger, green chilli and onion. Add the dry red chilli and toss well. Dip the chicken pieces in coating batter and fry until golden brown. Drain excess oil through a strainer.
2. Now add the diced capsicum, onion & add ENE SWEET CHILLI SAUCE and stir for 2 minutes.
3. Add the fried chicken and toss well until dry.
4. Add a little bit of dark soy, lemon juice, sesame oil and small amount of chill sauce.
5. Finish with cornflour slurry to give glaze on top.
6. Serve hot with a garnish of chopped spring onions.

HONG KONG CHILLI COTTAGE CHEESE/PANEER

Ingredients:

1. Cottage Cheese / Paneer cubes (10-15 pieces) (150 grams)
2. Corn flour for coating batter (30 grams)
3. Finely Chopped Ginger (10 grams)
4. Finely Chopped Garlic (15 grams)
5. Coriander Paste (20 grams)
6. Dark soy sauce (15 ml)
7. Diced Capsicum (20 grams)
8. Onion Dice (20 grams)
9. ENE Hot and Sweet Chilli Sauce (20 grams)
10.Lemon Juice (15 ml)
11.Corn flour mix with water (10 grams)
12.Aromatic powder (Optional) (4 grams)
13.White pepper powder (4 grams)
14.Salt (2 grams)
15.Spring Onion (20 grams)
16.Sesame Oil (8 ml)

Procedure:
1. Heat oil in a wok then add the finely chopped garlic, ginger, green chilli and onion. Add the dry red chilli and toss well. Dust the paneer pieces with refined flour and corn flour and deep fry. Drain excess oil through a strainer.
2. Now add the diced capsicum, onion, Add ENE Hot and Sweet Chilli Sauce & coriander sauce and stir for just 1 minute in high flame.
3. Add the fried paneer and toss well until dry.
4. Add a little bit of dark soy, lemon juice, sesame oil and small amount of chill sauce.
5. Finish with cornflour slurry to give glaze on top.
6. Serve hot with a garnish of chopped spring onions.

SWEET & SPICY CHILLI VEG NOODLES

Ingredients :
1. Broccoli (30 grams)
2. Mushroom (30 grams)
3. Green & Yellow Zucchini (20 grams)
4. Finely Chopped Ginger (10 grams)
5. Diced Capsicum (20 grams)
6. Diced Onions (20 gram)
7. Boiled Maggi / Top Ramen Noodles (140 grams)


For the Sauce
1. Finely Chopped Ginger (10 grams)
2. Dark Soy Sauce(10 grams)
3. ENE. Hot & Sweet Chilli Sauce (40 grams)
4. Siracha (15 grams)
5. Corn Flour (5 grams)
6. Diced Onions (20 grams)
7. Peanut Butter (15 grams)

Procedure:
1. Wash & Cut all the vegetables in small cubes.
2. Per boil the vegetables accordingly.
3. Boil the Maggi / Top ramen noodles & keep it aside.
4. To make the sauce, heat a pan, add oil & then put finely chopped ginger , sauté it until golden brown. Then put siracha, dark soy sauce Peanut butter & ENE HOT and SWEET CHILLI SAUCE. At the end put corn flour slurry & whisk it for 1 minute. Add little Luke warm water to make the sauce little runny.
5. In a pan heat it, add refined oil put diced onion & capsicum. Then put all the parboiled vegetables, then add noodles & pour the remaining sauce.
6. You can put fried garlic as a garnish if you wish so.
