Manjusha Barua, Founder
Born in Assam, Manjusha travelled the length and b2th of the region with her father who served with the Government of Assam in various capacities. The beauty and diversity of the rich, magical land that she saw in her childhood remained imprinted in her memory.

After her post graduation from Bombay University and a diploma in Mass Communications from St. Xavier's, Mumbai, Manjusha worked in Corporate Communications & Branding with two oil majors - IBP Co. Ltd. and Indian Oil - Corporation for over 20 years.

This took her to various locations across the country and, in the course of her travels, she became passionate about connecting the wonders of the North-East with the rest of the world.

Today this region is slated to become a ‘Natural Economic Zone for the Country’ and for Manjusha, there was no better way to organically connect others to this exotic land than with its food and food products. She wanted to create a product that would give the world a “taste of North East” and bring the unique touch, feel and flavors of this region to every household. Thus was born EAST BY NORTH EAST.

With over 20 years of experience in the Food Industry in India and USA (16 years at Unilever and the International Food Network in the US) Rinka Banerjee’s passion for driving business growth in foods through technology and innovation led her to create Thinking Forks, a consulting firm offering tangible end to end solutions to the Food & Nutrition industry, backed by a team of technical professionals with strong business experience and deep domain expertise.

Rinka has built strong networks with the food innovation eco-system in India. She has been a core member of external bodies such as the governing board of the Protein Food & Nutrition Association of India and the R&D core group of FICCI, a leading industry association in India.

The Bhut Jolokia is three times hotter than Habanero chilli peppers
and 400 times hotter than Tabasco sauce.

It can be pickled, put into curries, and even a touch of it can add the heated zing to any meal. It is legendary as a pepper that can turn food aficionados into devotees.

In 2007, The Guinness book of World Records rated the Bhut Jolokia
(ghost pepper) as the world's hottest chilli pepper.

BHUT JOLOKIA — also known as the Ghost Chilli/Pepper has grown for many centuries and is believed to have originated in Assam, though today, it is grown in the neighbouring states of Arunachal Pradesh, Nagaland and Manipur too.

The Scoville Scale is a way to rate the amount of capsaicin in peppers. It was developed by Wilbur Scoville in 1912. He soaked peppers in alcohol to extract the capsaicin. Then he added pre-sweetened water to dilute the extract so it was barely able to be tasted by the tongue. The amount of water it took to dilute the extract became Scoville Units. The Bhut Jolokia is rated at more than 1 million Scoville Heat Units (SHUs)!!

The Phaal Curry is quite literally the hottest curry in the world. This dish is so spicy that restaurants serving it provide customers who finish a whole bowl of it with a certificate of recognition. The Phaal curry contains about 10 different types of peppers, including Bhut Jolokia, one of the world's hottest.

Bhut Jolokia is used as a food and a spice, as well as a remedy to summer heat. It is used in both fresh and dried forms, to not only "heat up" curries, pickles and chutneys, but also to impart two distinct flavors to them.
The capsaicin intensity changes significantly from fresh to dried. The fresh Bhut Jolokia packs the highest pungency with 1 million Scoville units, whereas in the powdered form it can fall to roughly 750,000 to 900,000 Scoville units.
In the North East, Bhut Jolokia pepper is commonly smeared on fences or incorporated into smoke bombs as a deterrent to keep wild elephants at bay.
